Gluten Free Granola Recipe

5 cups gluten free rolled oats
1 cup  unsweetened shredded coconut
1 cup coconut oil – melted
3/4 cup maple syrup
1 cup raw pumpkin seeds
3/4 cup walnut pieces
3/4 cup pecans
3/4 cup slivered almonds
1 tbs. cinnamon
2 tsp. fresh ground nutmeg
1 tsp. ground cardamon
pinch celtic sea salt

  1. Preheat oven to 350-degrees.
  2. Mix all ingredients in a bowl.
  3. Line two high-rimmed baking sheets with parchment paper and place half of the mixture in each tray.
  4. Bake for 10 minutes.
  5. Remove trays and stir the granola.
  6. Bake for 10 minutes.
  7. Remove trays and stir the granola.
  8. Bake for 5-10 minutes. Keep an eye on the granola at this point. It can turn on you and burn in a nanosecond. Final amount of time depends on your oven and how dark/crispy you like your granola.
  9. Let cool in pans and then store in air-tight containers.
