Greek Salad Recipe – Amping Up The Nutrient Factor!

Wondering what to do with all those tomatoes and cucumbers from your garden right about now? Or, maybe you’re just a big greek salad fan! Either way, this super easy recipe is delish, and uses ingredients that will increase the nutrient value versus your typical greek salad.

Ingredients:

1 head romaine lettuce, cut up
1 cucumber, peeled and de-seeded (is that a real word?), and cubed
1 cup diced tomatoes
1 medium shallot, finely diced
1/4 cup feta cheese, crumbled
1 1/2 teaspoons dried oregano (or the 2 tsp fresh)
1 tablespoon flax seed oil (shake well before using)
2 tablespoons apple cider vinegar
a few grinds of the pepper mill
pinch of Celtic sea salt

Method:

Put everything in a large salad bowl and mix well. Doesn’t get much easier than that!

Notes:
  • •  Serves 1 for a nice big salad or 2-3 as a starter salad.
  • •  I’m not a huge fan of raw onions, which is why I prefer to use the more delicate flavor of shallots in this recipe. But, if you totally dig your raw onions, substitute a 1/4 cup or so of raw red onion.
  • •  To make this baby a meal, I like to add some diced chicken breast, poached salmon, or grilled shrimp.
